There's nothing like relaxing with family during Thanksgiving or Christmas with some indulgent sweet potatoes. For the people who've always loved sweet potatoes, I know how crazy they go for sweet potato bakes or casserole especially during the holidays. Its held in high regard as an essential dish for the holidays just like macaroni and cheese, collard greens, honey baked ham, roast beef, turkey, and pies.
Ironically, I didn't used to like sweet potatoes but after learning and teaching myself to roast sweet potatoes in an oven or this dessert version of cooking sweet potatoes, I've developed some love for them. I actually came up with this recipe because my brother and mom really love sweet potatoes and since I'm the only person who really cooks in the house, I wanted to make something good for everyone during Thanksgiving and Christmas. It was a huge hit and I want to share this recipe with my fellow home cooks. I hope you use this recipe for your loved ones also even if its not a holiday!

Ingredients:
-6 sweet potatoes
-1/2 cup brown sugar
-1 1/2 tbs. ground cinnamon
-1 tsp. ground nutmeg
-1/2 cup unsalted butter or margarine
-1/2 cup milk
-1 tsp. vanilla extract
-1 cup mini marshmallows for mixing in the potatoes
-marshmallows for topping
Steps:
Boil potatoes in water for 25 minutes. Drain and let the potatoes cool off for 15 minutes before peeling.
Chop potatoes into small pieces then add to a mixing bowl. Add all seasonings and milk and mix well until potatoes are thoroughly mashed. Mix in the 1 cup marshmallows.
Place mashed potatoes in a baking dish and completely cover the surface with marshmallows. Preheat oven to 375 degrees and bake for 15 minutes or until marshmallows are golden brown. Enjoy!
