Over the past year, I've been trying to add more lean meats to my diet and come up with more creative ways to cook with ground turkey. After doing some googling to try to find some inspiration, rice bowl combined with ground turkey seemed the most interesting way to cook with ground turkey that wasn't chili, tacos, stroganoff, spaghetti, casseroles, etc. One a weekend that I wanted to get rid of some kale, a idea came to me to make a healthy rice bowl with ground turkey and my "Brazilian Collard Greens" recipe (see here). The result is deliciously tender lean ground turkey and kale with a hint of heat, garlic, and citrus that is filling and addictive as well as healthy. If you're looking to use ground turkey for something other than the usual recipes and want to get some kale in your diet, you'll love this recipe!
Ingredients:
-1 lb. lean ground turkey (preferably 85% or 95% lean)
-3 cups fresh pre-chopped kale
-1 cup long grain brown rice
-1 1/2 cups chicken broth
-2 tbs. olive oil
-1/4 tsp. red crushed pepper or 1/2 tsp. if you want it hotter
-1 tsp. onion powder
-1 tsp. garlic powder
-2 tbs. minced garlic
-1 tsp. paprika
-2 tbs. lemon juice
-1 tsp. salt
-black pepper to taste
Steps:
Cook the rice according to package directions. In a large pan, cook ground turkey with 1 tbs. olive oil, onion powder, and garlic powder until browned. Set aside.
Add 1 tbs. olive oil to the pan on medium high heat. Add the kale, chicken broth, and all seasonings. Cook for 15 minutes, stirring occasionally until the kale has become tender and dark green. Mix in the ground turkey and rice and serve. Enjoy!
