Fall is here and its the perfect time for a soup with some spice and heat! Even though I personally love spicy and hot food all year round, there's nothing like a hot bowl of soup during the fall and winter. Cajun and Cajun inspired dishes and soups are some of my favorite spicy foods to cook and this recipe was inspired by my desire to have a soup similar to gumbo in flavor but without the seafood and lots of protein. As most of my tasty soup recipes, it only takes about 20 minutes to make and is easy for both busy people or people new to making soups from scratch. Even if you think you'll miss the shrimp, I promise you'll love this spicy and hearty soup with chicken. If you do miss the shrimp, you can always modify the recipe to have both chicken and shrimp ;). Start off your fall season with this delicious soup recipe!
Ingredients:
-2 chopped boneless skinless chicken breasts
-1/2 cup chopped celery
-1/2 cup chopped green bell peppers
-1 cup frozen okra
-1/2 cup chopped yellow or red onions
-a 15oz. can kidney beans, small red beans, navy beans, or cannellini beans (drained and rinsed) or 1/2 cup cooked dry kidney beans or small red beans
-a 15 oz. can diced tomatoes
-5 cups chicken broth
-2 tbs. tomato paste
-1/4 tsp. cayenne pepper for mild heat or 1/2 tsp. for more heat
-1 tsp. dried thyme
-1 tsp. onion powder
-1 tsp. garlic powder
-2 tbs. minced garlic
-1 tsp. smoked paprika
-1 1/2 tsp. Cajun seasoning of your choice
-1 tsp. Old Bay seasoning
-2 bay leaves
-1 1/2 tbs. olive oil
-black pepper and salt to taste
Steps:
1. Add the olive oil to a large pot on med-low heat. Gently add the tomato paste, celery, onions, and green bell peppers then stir until the tomato paste is completely mixed in, about 2-3 minutes. Add the broth, stir, and bring to a boil.
2. Add all seasonings and stir. Cover and cook on low heat for 10 minutes. Add the okra and chicken then cover and cook for 7 minutes. Serve and enjoy!
