Do you like shrimp? Do you like gumbo but don't always have the time or energy for the long prep and cooking process? This soup is a perfect alternative to gumbo when you want a mildly spicy soup with shrimp and a good amount of veggies that is less time consuming than making gumbo. I personally love the amount of vegetables in this soup and with double the protein. If you're looking for a good soup recipe with shrimp to try, I highly recommend this recipe for your family and friends!
Ingredients:
-half a bag of frozen (thawed) or fresh medium sized shrimp
-1 can navy beans, cannellini beans, or great northern beans (drained)
-1/2 cup chopped green bell peppers
-1/2 cup chopped celery
-1 cup chopped green cabbage
-1/2 cup chopped red onions
-1 can diced tomatoes
-1/2 cup chopped kielbasa or andouille sausage (opt)
-5 cups chicken broth
-1/2 tsp. cayenne pepper
-1/2 tsp. Old Bay seasoning
-1 tbs. Worcestershire sauce
-2 tbs. minced garlic
-1 tsp. Spice Jungle Seafood Seasoning
-1/2 tsp. smoked paprika
-2 tsp. hot sauce
-1 tsp. salt
-1 bay leaf
-black pepper to taste
-rice for serving
Steps:
In a pot, bring chicken broth to a boil. Add all ingredients and cook on low heat for 15 minutes. Cook the sausage pieces in a separate pan for about 5 minutes until slightly charred then add to soup. Remove the bay leaf and serve with rice. Enjoy!
