Red beans and rice is one of the few Cajun dishes that I've tried and once I did, I had to make it at home. There's something about the way that Cajun cuisine seems to perfectly blend spice and heat with depth of flavor that is pretty addictive even if you can't handle foods with heat. This side dish is flavorful enough to be the star while also being a perfect compliment to vegetable sides dishes like cabbage and main dishes like fried or baked fish. I enjoy cooking this for my family and I hope you do too!
Ingredients:
-2 cups Sarita Long Grain Enriched Rice
-4 cups chicken broth
-1 can kidney beans (drained)
-1/2 cup green bell pepper (chopped)
-1/2 cup red or yellow onions
-1/2 cup celery (chopped)
-2 tbs. minced garlic
-2 tsp. smoked paprika
-1 tsp. thyme
-2 bay leaves
-1/2 tsp. cayenne pepper
-1 can diced tomatoes (drained)
Steps:
Bring broth to a boil. Add all ingredients and simmer on low heat for 20 minutes. Remove bay leaves. Enjoy!
