As a home cook who loves curry and vegetables, I came up with this recipe for the home cooks and people who want to switch things up from the usual meat centered curries. As much as a I love a good chicken and potato curry, sometimes I just a curry filled with veggies. Don't be fooled, this recipe has as much flavor as my curries with meat in them. I guarantee that you won't be able to put it down once you start eating it!
Ingredients:
-1/2 cup or 1 cup green lentils
-1 small or medium head of cauliflower (chopped)
-2 russet potatoes
-1/2 cup chopped red onions
-1 1/2 cups pre cut collard greens
-4 cups chicken broth
-1 can coconut milk
-3 tbs. Savory Spice Vindaloo or Medium Yellow Curry Powder
-1 tsp. Spice Jungle Garam Masala
-2 tbs. sugar
-1/2 tsp. cayenne pepper
-1/2 tsp. allspice
-1 tsp. ground ginger
-2 bay leaves
-3 tbs. minced garlic
-2 tsp. salt
-3 tbs. olive oil
-2 tbs. lemon juice
-black pepper to taste
-basmati rice for serving
Steps:
Heat oil in a pot. Mix in the vindaloo or curry powder and garam masala. Add the broth and coconut milk then bring to a boil.
Add all ingredients. Cover and cook on low heat for 30 minutes. Serve with basmati rice. Enjoy!
