The past two years I've been getting into cooking zucchini and squash more often and I've been loving how versatile and easy to cook they are as vegetables. They're delicious roasted, sauteed in a pan with butter, steamed, cooked with a tasty parmesan and panko crust, in soups, or baked with cheese in a casserole. This recipe adapts my favorite way to cook zucchini and squash which is to cook them in a pan with margarine, lemon juice or lemon pepper, garlic with onions, and sometimes mushrooms as a side dish. Zucchini and squash both only need about 8 minutes to cook in a pan and ground chicken and cut up chicken breasts only need about 6 minutes, so combined they make a fast and delicious meal! Its also delicious with or without serving with rice if you want a filling low carb meal. Also, if you're a big fan of cooking with lemon and garlic with 30 minutes or less meals like me, this recipe is definitely for you! Once you try this recipe, you may make this one of your go-to recipes for using chicken, zucchini, and squash.

Ingredients:
-1 or 2 boneless skinless chicken breasts cut into bite sized pieces or 1 lb. ground chicken
-1 chopped zucchini
-1 chopped yellow squash
-1/2 cup chopped red or yellow onions
-1 cup chopped baby bella mushrooms (opt)
-3 tbs. butter or margarine
-2 tbs. minced garlic
-2 tbs. lemon juice
-Lawry's Garlic Salt with Parsley to taste
-Mrs. Dash Garlic and Herb Seasoning to taste
-black pepper to taste
-1 tbs. olive oil for chicken
-1 tsp. garlic powder and onion powder each
-rice for serving
Steps:
If using chicken breasts, season the chicken with black pepper, garlic and onion powders, Mrs. Dash seasoning, and some of the garlic salt. Heat olive oil and butter/or margarine in a pan. Add chicken, onions, vegetables, and seasonings to the pan. Cook for about 8 minutes, stirring occasionally on med-high heat, until chicken and vegetables are cooked through. Serve with rice and enjoy!
If using ground chicken, cook chicken with 1 tbs. olive oil, 1 tsp. garlic powder and onion powder, and Mrs. Dash Garlic and Herb seasoning until browned. Remove from pan and set aside. Add the butter and/or margarine to the pan then the vegetables once it melts. Season with the minced garlic, black pepper, lemon juice, garlic salt, and Mrs. Dash and cook for 8-10 minutes stirring occasionally. Add the ground chicken back to the pan, stir and serve with rice. Enjoy!
