If you're looking for a healthy broth based soup with invigorating spices like ginger and turmeric, look no further. I came up with this recipe while thinking about creating my own vegetable soup with cabbage as the star but without the flavors and meat that usually goes into cabbage soup recipes. My own spin on it includes some heat and curry powder. Who says that a healthy soup has to be boring and bland?
Ingredients:
-half a head of green cabbage (chopped)
-1/2 cup chopped celery
-1 can no salt added diced tomatoes
-2 russet potatoes
-1 can navy beans (drained and rinsed)
-1 tsp. Savory Spice Vindaloo (see here for more info)
-2 tbs. olive oil
-3 tbs. lemon juice
-1/2 tsp. dried thyme
-3 tsp. turmeric
-1 tsp. salt
-1/4 tsp. cayenne pepper
-1 tsp. ground ginger
-1 tsp. smoked paprika
-5 cups chicken broth
Steps:
Bring the broth to a boil and add all ingredients. Cover and cook on low heat for 15 minutes. Enjoy!
