Do you love tacos? Do you love pasta? You probably have never heard of taco pasta before and neither had I until I found it on google. To my surprise, most of the recipes were a bit bland and reminded me of the lack of ingredients in Hamburger Helper. Being a creative home cook, that inspired me to take a crack at this Mexican fusion dish and I'm confident that I came up with one of the best versions of this dish, if not the best out there right now. This dish is sure to be a hit with big families, kids, and anyone who loves tacos who may also have an habit of eating their chili with macaroni noodles.

Ingredients:
-1 lb. ground turkey
-2 cups macaroni noodles or medium size shell pasta
-1/2 cup chopped yellow onions
-1 green bell pepper chopped
-1 red bell pepper chopped
-1/2 cup frozen sweet white corn (opt)
-14-15 oz. can black beans (drained and rinsed)
-15 oz. can fire roasted tomatoes or regular diced tomatoes
-1 can tomato sauce (opt)
-2 cups beef broth or 2 beef bouillon cubes + 2 cups water
-4 oz. cream cheese cut into cubes
-1 1/2 tbs. olive oil
-2 tbs. minced garlic
-1 tsp. dried oregano
-1 tsp. smoked paprika
-1/4 tsp. cayenne pepper
-1 tsp. cumin
-2 tbs. chipotle peppers in adobo sauce
-1 tsp. salt
-1 cup freshly grated sharp cheddar cheese
Steps:
In a small bowl, mix all dry seasonings together and set aside. In a large pot on med-high heat, add 1 1/2 tbs. olive oil, the ground meat, onions, and bell peppers with two small spoonfuls of the dry seasoning mixture.
2. Cook, stirring occasionally for about 6 minutes until the meat has browned and the vegetables have softened.
3. Gently add the beef broth, corn, tomato sauce, beans, diced tomatoes and all seasonings to the pot. Bring to a boil, cover, and cook stirring occasionally according to pasta box instructions. For macaroni noodles its 8 minutes and for medium pasta shells its 11 minutes.
4. Once the pasta is tender, add the cream cheese cubes, grated cheese, and gently stir until the cream cheese is completely melted and mixed in. Let sit for 5-10 minutes then serve. Enjoy!
