Irresistible Sausage, Sauerkraut, and Rice

Over the past few years, I've become a big fan of pickled and fermented vegetables. I make pickled cucumbers and radishes as well as kimchi and more recently sauerkraut pretty often. I recently tried sauerkraut for the first time and I absolutely fell in love! This recipe came about on a few nights where I wanted to cook something for dinner that didn't take much effort and had kielbasa and sauerkraut in it. Hence, this easy recipe that takes less than 15 minutes to make was born and its become one of my go-to lazy lunch or dinner recipes in my regular meal rotation. If you're also a sauerkraut fan and want to use it for more than just sandwiches and you love stir fried sausage, you'll be in heaven once you taste this combination! Also, this recipe is absolutely delicious with homemade sauerkraut or with a good store brand sauerkraut.

Ingredients:

-1 cup thinly sliced kielbasa, andouille sausage, or your choice of sausage

-1 1/2 cups sauerkraut either homemade or store bought (one store brand I like is Saverne Artisanal Kraut)

-1 cup short or long grain white or brown rice

-1/2 cup chopped red onions

-3 tbs. unsalted butter or margarine

-black pepper to taste


Steps:

  1. Drain and rinse the sauerkraut in a colander in the sink. Rinsing and draining keeps the sauerkraut from being overly salty when you cook it. Cook the rice according to package directions. Melt the butter or margarine in a pan on med-high heat.

  2. Add all ingredients and cook, stirring occasionally for 10 minutes or until the sauerkraut and sausage is slightly browned. Serve with rice and enjoy!
