Goulash soup is a hearty Hungarian soup similar to American beef stew that is packed with tomatoes and has a lot of paprika. It is one of the dishes Hungarian is famous for and is eaten primarily in Central Europe. When I was in college I visited Hungary for a few days and goulash was one of my favorite dishes that I ate there and the most memorable. This dish is not to be confused with American Goulash which is pretty much chili mac. This is a hearty, healthy, and easy way to make it at home for you and your family.
Ingredients:
-1 lb. ground turkey or ground beef
-2 russet potatoes (chopped and peeled)
-1/2 cup chopped carrots
-1/2 cup chopped red onions
-2 cans diced tomatoes
-1/2 cup chopped celery
-5 cups beef broth
-3 tbs. minced garlic
-1/2 tsp. dried thyme
-2 tsp. smoked paprika
-1 tsp. paprika
-1/2 tsp. cayenne pepper
-1 tsp. salt
-1/4 tsp. black pepper
-2 tbs. olive oil
-1 tbs. Worcestershire sauce
-1 bay leaf
Steps:
Brown the ground turkey in a pan and drain the oil. Add the ground turkey and all ingredients to a pot. Bring the soup to a boil and simmer covered on low heat for 15 minutes. Enjoy!
