Soup is one of my favorite genres of food to make because soups are so simple to make yet have so many possibilities. In trying to eat healthier and make easy recipes, I've found that making soups from scratch is an easy way to get your daily vegetables and protein intake along with an easy way to get creative with a variety of flavors. No matter what you're in the mood for; Thai, Vietnamese, Mexican, Italian, Spanish, Polish, Hungarian, or American, there is a soup out there for your tastes and for your family. This recipe is for one of my favorite soups that is healthy, satisfying, and packed with protein and vegetables.
Ingredients:
-1 cup chopped boneless skinless chicken breasts seasoned with salt, pepper, garlic powder, and onion powder
-1 can navy beans or cannellini beans (rinsed and drained)
-1/2 cup chopped red or yellow onions
-1 cup chopped celery
-1 cup chopped carrots
-1 cup chopped baby bella mushrooms
- 5 1/2 cups chicken broth
-1 tsp. smoked paprika
-1/2 tsp dried thyme
-1/2 tsp. dried rosemary
-1 tsp. salt
-2 tbs. minced garlic
-2 tbs. olive oil
-1 tsp. McCormick Rotisserie Chicken Seasoning
-black pepper to taste
-cooked brown rice, white rice, or quinoa for serving
Steps:
Cook rice. Bring broth to a boil and add all ingredients. Turn the heat down to low, cover, and cook for 15 minutes. Serve with rice. Enjoy!
