As I've been focusing more on my diet, I've been having fun coming up with creative ways to use lean ground turkey other than the usual chili, tacos, meatballs, and spaghetti recipes. One of the days that I needed to use up some cabbage, it occurred to me that I had all of the ingredients for cabbage rolls but I've never made them before and the process seemed to require more time and effort than I wanted for making dinner. So I came up with an easy and healthy version of cabbage rolls that has all of the same flavor as cabbage rolls but is done in 30 minutes or less. If you're in the mood for a quick cabbage roll dish but are feeling a bit lazy or just need to use a lot of cabbage, you'll love this recipe!
Ingredients:
-1 lb. ground turkey
-2 1/2 cups chopped green cabbage or 1 small head of green cabbage
-1/2 cup chopped yellow onions
-1/2 cup chopped carrots
-1 cup cooked long grain brown rice
-1 15 oz. can no salt added diced tomatoes
-1 15 oz. can no salt added tomato sauce
-1 tbs. olive oil
-1 cup beef broth
-1 tbs. brown sugar
-1 tbs. red wine vinegar
-2 tbs. minced garlic
-1 tsp. dried oregano
-1 tsp. dried thyme
-2 tsp. salt
-1 tsp. paprika
-1 tsp. onion powder
-1 tsp garlic powder
-1/4 tsp. ground black pepper
Steps:
In a wok or large pan, add turkey, carrots, onions, and olive oil and cook until the turkey is browned.
Add the rest of the ingredients, stir, and bring to a boil. Turn the heat down to medium-low, cover, and cook for 20 minutes.
Remove cover and mix in the rice. Serve and enjoy!
