For a long time I hated sweet potatoes, especially sweet potato pie. It wasn't until I spent Christmas over a friend's house a few years ago and had her mother's home grown sweet potatoes that I began to acquire some taste for them. Since then I've tried making roasted sweet potatoes both sweet and savory and my latest version that I've tried making is this recipe. I know that most people love making sweet potatoes sweeter with cinnamon, sugar, and nutmeg but I've found that savory mashed sweet potatoes are pretty tasty also but in a more contrasting flavor kind of way. Even if you haven't cooked sweet potatoes before and are intimidated by the tough skin, don't worry I have a method that makes prep so much easier. I invite everyone to try this variation on sweet potatoes!
Ingredients:
-5-6 sweet potatoes
-1/4 cup unsalted butter
-1/2 tsp. salt
-1 tbs. minced garlic
-1 tbs. dried or fresh chives
-1/4 cup sour cream
-1/4 cup milk
-black pepper
Steps:
Boil potatoes in lightly salted water for 25 minutes. Drain and let cool off for 15 minutes. Peel the skin off and chopped the potatoes into small pieces. Place the potato chunks into a mixing bowl.
Add all seasonings and using a mixer, blend together until the potatoes are smooth. Serve and enjoy!
