Easy Sauteed Yellow Squash and Zucchini with Onions

Since I cook at home pretty often and sometimes feel lazy, I prefer to cook fresh vegetables that are simple to prepare and don't take long to cook with zucchini and squash being two of my favorite ones. My other favorites that are in my weekly meal rotations are: mushrooms, broccoli, cabbage, cauliflower, carrots, celery, green beans, spinach, russet potatoes, and sweet potatoes. Yellow squash and zucchini only take about 8-10 minutes to cook either steamed or sauteed in a pan, are low calorie and low carb, and don't require a lot of seasoning to be tasty. They're also delicious cooked together, by themselves, or cooked with mushrooms as a side dish. In my opinion, zucchini and yellow squash are also some of the best vegetables that go perfectly with herby seasonings and garlic. This recipe is one of my favorite vegetable side dish recipes and I hope that it'll become one of yours also especially if you're nervous about cooking fresh vegetables or are looking for a good recipe with yellow squash/or zucchini. If you have some butter, Italian seasoning, or garlic and herb seasoning you're good to go!





Ingredients:

-1 yellow squash (chopped into pieces of the same size)

-1 zucchini (chopped into pieces of the same size)

-1/2 cup chopped yellow or red onions

-3 tbs. butter or margarine

-1 tsp. Italian seasoning (opt)

-black pepper to taste

-garlic salt to taste


Steps:

  1. Melt butter or margarine in a large pan on med-high heat. Add squash and onions and cook for 10 minutes, stirring occasionally until the squash has softened. Serve as a side to chicken or fish. Enjoy!
