I'm not big on eating breakfast most of the time as I usually don't get hungry until the early afternoon but on weekends, I love whipping up a delicious brunch! Recently, I've decided to try cooking more breakfast/brunch recipes to expand my cooking knowledge and because there's always someone out there who could use some easy breakfast/brunch recipes. My brother loves sweets and sweet breakfast food like French toast, pancakes, and waffles and he often asks me to try making more sweet dishes so I've been getting into making pancakes from scratch. Personally, I like sweet foods also but don't have as much of a sweet tooth as my brother, so I made this recipe (which he gratefully approved!) that will suit both people who like mildly sweet pancakes and those who are craving something sweet for breakfast. I look forward to experimenting with more delicious pancake flavors and combinations and any successful ones I will post here for you to make anytime as well.
Ingredients:
-1 1/4 cup flour
-1 tsp. vanilla extract
-1 egg
-1/2 cup milk
-1 1/2 tsp. baking powder
-4 tbs. brown sugar
-1 tbs. sugar
-1 tbs. ground cinnamon
-2 tbs. melted butter or margarine
-confectioner's sugar, butter, or maple syrup for serving
Note: You can use Bisquick mix instead of making the batter from scratch as an alternative and just add the cinnamon and brown sugar to it
Steps:
Mix all ingredients in a bowl. Let the batter sit for 5 minutes.
Spray a pan with cooking spray and add about 1/4 cup of the batter to the pan. Cook the pancake on medium heat for 2 minutes on each side.
Repeat step 2 until the batter is completely used up. Enjoy!
