Easy Chickpea Salad

It's been awhile since I posted a salad recipe hasn't it? I haven't been trying out new salad recipes or versions much since early last year but I've discovered a love for chickpeas recently. I love beans and grew up eating a few kinds but have never tried chickpeas until a few months ago. I totally fell in love with them after making chickpea curry with cauliflower and chickpea curried rice which led to this amazing salad recipe. This recipe came about on a day when I didn't feel like cooking and wanted a healthy and filling meal with only the ingredients in my fridge and felt like experimenting with some za'tar seasoning I got as a Christmas present. The za'tar seasoning sauteed in olive oil with chickpeas and onions combined with plain Greek yogurt mixed with Mediterranean flavor in a heavenly combo and the crunchy fresh cucumbers are the cherry on top! Not to mention its packed with protein and fiber and keeps you full! I've made this recipe one of my go to lazy meals when I have canned chickpeas and I guarantee once you try this, you'll be making it whenever you're feeling hungry and lazy.




Ingredients:

-1 can chickpeas/garbanzo beans (drained and rinsed)

-1 cucumber chopped

-1 cup plain Greek yogurt

-1/4 cup chopped red onion

-2 mixing bowls

Seasoning for Chickpeas:

-1 1/2 tbs. olive oil

-2 tsp. za'tar seasoning

-1 tsp. salt

Seasoning for Yogurt:

-1 tsp. dried dill

-2 tbs. lemon juice

-1 tsp. garlic powder

-1 tsp. onion powder

-1/4 tsp. black pepper

-1/4 tsp. salt


Steps:

  1. Drain and rinse the canned chickpeas in a colander in your kitchen sink. In a bowl, combine the chickpeas, olive oil, and seasonings. Add the chickpeas and onions to a pot on med-high heat. Once the pot starts to steam, cook for 6 minutes stirring occasionally until the onions are cooked through.


2. Slice and chop the cucumbers then set aside. Add the yogurt to a bowl and mix in the dried seasonings and lemon juice.



3. To serve, add the yogurt to a bowl then top with the cucumbers and a spoonful of the chickpeas and onions. Enjoy!
