I love chicken and how versatile it is with the many ways that you can cook it and use it. I like a good grilled, breaded, or fried chicken like many people but lately I've been trying to come up with healthy, easy, and delicious ways of cooking chicken. One of my favorite ways to cook chicken has been baking and blanching. Contrary to popular belief, blanching may seem bland but if you season the chicken with a little salt and pepper and some rotisserie chicken seasoning before blanching, its an addictive ingredient in homemade salads. With baking, I've been enjoying using different spice combinations and this quick rotisserie baked chicken recipe is my number one go-to baked chicken recipe for weeknight dinners. I look forward to coming up with and posting more easy and tasty baked chicken recipes in the future!
