Like many people, I once couldn't get enough of the convenient chicken flavored "Knorr Sides" or "Rice-a-Roni" rice. It was just so easy to throw one on the stove while making some vegetables and meat to go with it. But, over the past two years and this year especially I've become more vigilant with my sodium intake and cooking almost every day at home has helped with controlling that. As much as I like to cook Hamburger Helper occasionally and sometimes Knorr side dishes, I've found my own flavorful and healthy ways to cook rice and/or couscous at home. Whether you like brown rice or white rice, this recipe is as convenient and even more flavorful than the store bought stuff. Also, anything that my picky brother who isn't as much of a foodie as me loves it a definite hit for everyone else and he couldn't get enough of this rice. The next time you're in the mood for an easy and tasty rice side dish, why not give this one a try?

Ingredients:
-1 cup long grain white or brown rice
-chicken broth with the amount of water you'd usually use for cooking rice (you're just replacing chicken broth for the water)
-1 tsp. McCormick Rotisserie Chicken Seasoning
-2 tbs. butter or margarine
-black pepper to taste
-1/4 tsp. salt
Steps:
Bring chicken broth to a boil. Add rice and all seasonings. Cook on low heat for 20 minutes if using white rice and 45-50 minutes for long grain brown rice. Serve with your favorite meat and vegetables. Enjoy!
