Chicken Mai Fun

Chicken Mai Fun is one of the many noodle dishes that you may find on a Chinese takeout menu. It doesn't have as many variations are lo mein dishes but its a light and tasty noodle stir fry that is perfect for when you aren't in the mood for a noodle dish with lots of sauce. Mai Fun basically is a dish comprised of thin or thick rice noodles, scrambled eggs, carrots, yellow onions, and green onions and is lightly seasoned with sesame oil and soy sauce. You can make this dish with shrimp, pork, or beef as well as chicken. I love making this when I'm in the mood for an Asian noodle dish that isn't heavy or very salty (as much as I love savory and salty sauces in Chinese dishes). The next time you feel like having takeout, why not make this?







Ingredients:

-1 cup chopped boneless skinless chicken breasts

-3 eggs

-1/2 cup chopped red or yellow onions

-1/2 cup chopped celery

-1/2 cup chopped carrots

-4 oz. thin rice noodles or pho noodles

-4 tbs. soy sauce

-2 tbs. Kadoya sesame oil

-1 tbs. minced garlic


Steps:

  1. Cook noodles and drain. Scramble eggs. In a separate pan, cook chicken, onions, carrots, celery, and seasonings for 6 minutes on med-high heat.

  2. Add eggs and noodles. Mix well and serve. Enjoy!
