I love Korean bbq especially whatever the addictive marinades that the beef and pork are cooked with. I'm usually someone who rarely eats beef and pork and when I do is a rare treat for myself when I go out to eat sometimes. Usually I eat chicken, shrimp, and fish as a part of my weeknight diet. Imagine my surprise after tasting the beef and pork bulgogi when I tried the chicken bulgogi and it was surprisingly super bland! I've tried chicken bulgogi at three different places and the results were the same; beef and pork were seasoned to the gods and the chicken was extremely lackluster. Being the home cook who loves food and experimenting with creating and re-creating foods I like, I got in the kitchen and decided to make my own chicken bulgogi with the Korean ingredients I have at home. Not to brag but my version is a million times better than what you've probably had at restaurants and I invite anyone who mainly eats chicken and who likes Korean bbq to try this recipe!
Ingredients:
-1 cup boneless skinless chicken breasts cut into small pieces
-1/2 tbs. gochugaru
-1 tbs. sesame oil
-2 tbs. soy sauce
-1 tbs. minced garlic
-1 tbs. brown sugar
-1 tbs. mirin
-black pepper to taste
Steps:
Mix seasonings with the chicken and set aside to marinate for 10 minutes. In a pan, cook the chicken on medium heat until browned, about 6 minutes. Serve with rice and your favorite Korean side dishes. Enjoy!
