This recipe was born from my idea to do something different with collard greens and chicken that wasn't the Southern method of boiled greens and fried chicken. I've been loving and experimenting with making spicy collard greens and green beans and so I thought "why not add sauteed chicken to it?" Enjoy this simple and delicious twist on chicken and collard greens!
Ingredients:
-1 cup chopped boneless skinless chicken breasts seasoned with salt and black pepper
-half a bag of precut and pre washed collard greens
-1/2 cup chopped red onions
-2 tbs. minced garlic
-3 tbs. lemon juice
-1/4 tsp. red crushed pepper
-1/2 tsp. salt
-1/2 cup chicken broth
-1/2 tsp. smoked paprika
-3 tbs. margarine or butter
Steps:
Melt margarine in a pan and add chicken. Cook on med-high heat for about 6 minutes. Remove the chicken from the pan and set aside.
Add chicken broth, collard greens, onions, and all seasonings to the pan. Bring to a boil and Simmer on medium heat for 10 minutes, until greens are fully cooked. Mix in chicken and serve. Enjoy!
