I like making soup because there's a soup for any mood and season. Lately I've been making and coming up with so many different soup combinations that I might as well start calling myself a "souptarian". Even though I mostly make broth based soups I have a couple comfort food soup recipes like this one. Broccoli and cheese soup is one of those soups that make your strangely nostalgic whenever you have it no matter where you are. This recipe is my take on the soup with more vegetables, meat, no heavy cream, and is an easy soup to make from scratch for beginner cooks. The next time you want a soup to relax with, try this recipe out!
Ingredients:
-1 medium or large head of fresh broccoli chopped into small florets
-1 chopped boneless skinless chicken breast
-1/2 cup chopped yellow or red onions
-1 cup chopped carrots
-1 cup chopped baby bella mushrooms
-1 cup chopped celery
-6 tbs. flour
-6 tbs. butter or margarine
-2 cups milk
-3 cups chicken broth
-2 cups freshly grated sharp cheddar cheese
-1 tsp. smoked paprika
-1/4 tsp. cayenne pepper
-1/2 tsp. McCormick Rotisserie Chicken Seasoning
-1 tsp. ground black pepper
-1/2 tsp. salt
Steps:
In a large pot on med-high heat, melt margarine and mix in flour. Slowly mix in the broth and milk. Bring to a boil and cook for 3 minutes, stirring often.
Add all ingredients except the cheese, cover, and cook on low heat for 15 minutes. Mix in the cheese until its completely melted in to the soup. Serve and enjoy!
