This recipe is like the delicious and comforting chicken and gravy with rice except this recipe has a hearty Cajun inspired kick with slowly simmered chicken, green bell peppers, and celery. When you're in the mood for a comforting meal with some kick, try making this one for you and your family!
Ingredients:
-1 1/2 cups chopped boneless skinless chicken breasts seasoned with salt and black pepper
-1 cup chopped green bell pepper
-1 cup chopped celery
-1/2 cup chopped red onions
-1/2 cup vegetable oil
-1/2 cup flour
-2 1/2 cups chicken broth
-1/2 cup sour cream
-1 tsp. salt
-1 tsp. cayenne pepper or 1/4 for less heat
-2 tbs. minced garlic
-1 tsp. McCormick Rotisserie Chicken Seasoning
-1 tsp. smoked paprika
-2 bay leaves
-black pepper to taste
-rice for serving
Steps:
Heat the vegetable oil on medium heat. Whisk in the flour, turn the heat down to med-low, and stir thoroughly until the roux turns light brown. Slowly mix in the chicken broth and sour cream. Bring the mixture to a boil.
Add all seasonings, water, chicken, and vegetables to the pot. Cover and cook on low heat for 15 minutes. Serve with rice. Enjoy!
