Cajun Stewed Chicken

Do you love savory and creamy chicken and gravy? Did you try my absolutely scrumptious "Chicken and Gravy with Vegetables and Rice"? If not, you should! This recipe is like the delicious and comforting chicken and gravy with rice except this recipe has a hearty Cajun inspired kick with slowly simmered chicken, green bell peppers, and celery. When you're in the mood for a comforting meal with some kick, try making this one for you and your family!





Ingredients:

-1 1/2 cups chopped boneless skinless chicken breasts seasoned with salt and black pepper

-1 cup chopped green bell pepper

-1 cup chopped celery

-1/2 cup chopped red onions

-1/2 cup vegetable oil

-1/2 cup flour

-2 1/2 cups chicken broth

-1/2 cup sour cream

-1 tsp. salt

-1 tsp. cayenne pepper or 1/4 for less heat

-2 tbs. minced garlic

-1 tsp. McCormick Rotisserie Chicken Seasoning

-1 tsp. smoked paprika

-2 bay leaves

-black pepper to taste

-rice for serving


Steps:

  1. Heat the vegetable oil on medium heat. Whisk in the flour, turn the heat down to med-low, and stir thoroughly until the roux turns light brown. Slowly mix in the chicken broth and sour cream. Bring the mixture to a boil.

  2. Add all seasonings, water, chicken, and vegetables to the pot. Cover and cook on low heat for 15 minutes. Serve with rice. Enjoy!
