I used to hate asparagus growing up along with mushrooms, brussel sprouts, pickles, and bananas. Out of all those things I now love mushrooms and pickles as I've gotten older, haha. Now, I have a mild appreciation for the somewhat bitter, bold, and earthy flavor of asparagus compared to other vegetables that have a milder natural flavor. What changed my mind was cooking asparagus with garlic and lemon juice, which I don't know if you can tell by my recipes, are two of my favorite seasonings in the world and especially for vegetables. I'm a firm believer in putting garlic and lemon juice in almost everything I cook. This recipe is perfect for people who need a quick and tasty way to cook asparagus and for other serious garlic and lemon juice lovers out there like me. Ingredients:
-1 bunch fresh chopped asparagus
-2 tbs. olive oil
-2 tbs. butter or margarine
-2 tbs. minced garlic
-1/2 tsp. salt
-1/4 tsp. black pepper or more to taste
-2 tbs. lemon juice
-parmesan to taste
Steps:
Melt margarine in a pan and add the asparagus and all seasonings except the parmesan. Cook on med-high heat for 10 minutes, stirring occasionally until the asparagus is tender. Mix in parmesan. Enjoy!
