Addictive Garlic Lemon Asparagus

I used to hate asparagus growing up along with mushrooms, brussel sprouts, pickles, and bananas. Out of all those things I now love mushrooms and pickles as I've gotten older, haha. Now, I have a mild appreciation for the somewhat bitter, bold, and earthy flavor of asparagus compared to other vegetables that have a milder natural flavor. What changed my mind was cooking asparagus with garlic and lemon juice, which I don't know if you can tell by my recipes, are two of my favorite seasonings in the world and especially for vegetables. I'm a firm believer in putting garlic and lemon juice in almost everything I cook. This recipe is perfect for people who need a quick and tasty way to cook asparagus and for other serious garlic and lemon juice lovers out there like me. The next time you're in the mood for asparagus, why not try this recipe?





Ingredients:

-1 bunch fresh chopped asparagus

-2 tbs. olive oil

-2 tbs. butter or margarine

-2 tbs. minced garlic

-1/2 tsp. salt

-1/4 tsp. black pepper or more to taste

-2 tbs. lemon juice

-parmesan to taste


Steps:

  1. Melt margarine in a pan and add the asparagus and all seasonings except the parmesan. Cook on med-high heat for 10 minutes, stirring occasionally until the asparagus is tender. Mix in parmesan. Enjoy!
